It is key lime time.
Thank you, Rick for my special birthday treat–a home baked tart and citrus infused pie from a fruit unique to Florida–the key lime.
The Coastal Cook’s Key Lime Pie
Crust
2 cups crushed vanilla wafers
1.5 cup plain or nutty granola, lightly crushed. No sugar
1 stick unsalted butter (softened)
Pinch of salt
Filling
6 large beaten egg yolks
21 ounces sweetened condensed milk
1 and 1/8 cup fresh squeezed key lime juice
Crust:
Mix ingredients well and place in a 11-inch pie plate. Firmly pack sides.
Filling:
Whisk beaten eggs, milk and lime juice. Pour into crust
Bake 18 minutes at 325 degrees. Let cool 45 minutes and chill in refrigerator at least 8 hours before serving.
