My First Pineapple

Take any fresh pineapple, twist leaves and place stem in soil.

However, it is recommended that you turn the stem upside down and let it dry for a week. After it has dried, submerge the crown in water until it sprouts. White roots will appear. You can use toothpicks to anchor the stem in water.

First, a red cone appears, followed by a blue flower and then the fruit. It takes about 6 months or longer.

It is wonderful to watch it grow.

Romanesco

Romanesco–a great find at my local farmer’s market.

It is a flower.  Romanesco looks like cauliflower and broccoli, but it is light green in color.

Each bud is composed of a series of smaller buds, all arranged in a spiral. As a vegetable, Romanesco is rich in vitamin C, vitamin K, dietary fiber and carotenoids.

Romanesco was first documented in Italy (as broccolo romanesco). It is sometimes called broccoflower, but that name has also been applied to green cauliflower.

Brush with olive oil on a baking sheet; bake at 425 for 20-30 minutes until browned. If want to add spice, throw in a few pepper flakes. Serve with parmigiano-reggiano. It is delicious. You can eat the leaves too!

Holiday Pagach–A East European Tradition

6 c. flour
1 packet dry yeast
1 tbsp butter
1 egg, beaten
1 tsp. salt
1 tbsp. sugar
1 cup milk

FILLING:

Potatoes (3 large potatoes)
Sharp Cheddar cheese (1 and 1/2 cups shredded)
Egg
Salt and pepper

Beat until smooth. Dissolve yeast in 1/2 cup warm water. Scald 1/2 cup milk and mix with butter and sugar until dissolved. Let cool.

Mix yeast and milk mixture with flour. In bowl, knead all together and let rise until double in bulk. Let stand in bowl for 2 hours. Cover.
Make 3 balls and let rise until light. Roll out dough and put into cookie sheet, then put layer of potato and cheese mixture and put another layer of dough. Prick with fork and bake at 375 degrees for about 1/2 hour, then butter as soon as you take from oven.
