The Sunflower

Not only is the sunflower great to look at, it gracefully turns its head to follow the sun each day.

This tracking of the sun in young sunflower heads is called heliotropism but stops once they begin blooming.

By the time they are mature, sunflowers face east.

Growing sunflowers is easy and inspirational. Once you start growing them, it is easy to understand why they inspire everything from festivals to art.

Edible Florida

It is key lime time.

, Rick for my special birthday treat–a home baked tart and citrus infused pie from a fruit unique to Florida–the key lime.

The Coastal Cook’s Key Lime Pie

Crust
2 cups crushed vanilla wafers
1.5 cup plain or nutty granola, lightly crushed. No sugar
1 stick unsalted butter (softened)
Pinch of salt

Filling
6 large beaten egg yolks
21 ounces sweetened condensed milk
1 and 1/8 cup fresh squeezed key lime juice

Crust:
Mix ingredients well and place in a 11-inch pie plate. Firmly pack sides.

Filling:
Whisk beaten eggs, milk and lime juice. Pour into crust

Bake 18 minutes at 325 degrees. Let cool 45 minutes and chill in refrigerator at least 8 hours before serving.
