Interesting facts about beets.

•Beet juice benefits are very powerful. You only need a little bit of juice to get the benefits. Slowly increase the amount from 1 ounce to 2 ounce a week.

•Drink the juice raw because the most beneficial substances (like betalains) are lost when cooked. In addition, the oxalic acid in the beet becomes harmful when cooked, but is (in moderation) beneficial when raw.

•Juice the whole beets: roots plus greens. The greens contain most of the healthy minerals and vitamins.

•Beet juice may cause normal body functions to turn red. Don’t be surprised if this happens.

Fresh Homemade Oat Blueberry Pancakes

Weekday treat. Thank you, my darling.

1 cup flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
Dash of salt
1 cup milk
1/2 cup of oats
1 cup of blueberries
1 egg
3 tablespoons melted butter

Directions

In a large mixing bowl, stir together the flour, oats, sugar, baking powder, baking soda and salt. Using a whisk or large fork, mix in the milk and egg until well combined and smooth.

Heat non-stick skillet or griddle over medium heat and place butter in pan to melt. Using a 1/4 cup measure, pour pancake batter onto hot griddle. When pancake is golden brown, flip to cook other side.
